In placing my order for sturgeon, my understanding from fishing for wild Columbia sturgeon was that my guide does not leave skin, fat, or dark red meat on the filets as it is said the spinal cord and fat beneath the skin gives the meat a bitter taste and the red meat is overly fishy. Not being knowledgeable in “restaurant speak” I was unaware that a “bullet” would be a whole fish with skin attached. As such, when I received my order and discovered the skin, fat, and dark red meat was all still attached and included in my total weight. By the time I finished cleaning the filets per my understanding, my 5 lbs of sturgeon meat was less than 3 lbs. I emailed Caviarman regarding my disappointment regarding this as well as the fact the the delivery took so long that the ice in the box was completely melted, nor were the filets vacuum packed as indicated on their website and consequently the filets had taken on a rather strong odor. I was pleasantly surprised to receive a new order the next day with skin removed and filets still cold with plenty of ice still remaining. While I believe they could benefit with some changes to their website to better tailor customer expectations, I have to say they more than made up for any issues I had with outstanding customer service!
